The Fischer flat sharpening steel is a honing tool designed to maintain the sharpness of knives in professional and home kitchens. Produced from special high-carbon steel alloyed with chromium, manganese, and silicon, this product is coated with a 8 to 10 micron thick hard chrome layer that provides protection against corrosion. Thanks to this special coating, surface hardness increases by 3 to 4 HRC. Due to its magnetization feature, it retains steel particles generated during sharpening, offering a clean working area and leaving no scratch marks on the knife surface.
During the use of the sharpening steel, the cutting edge of the knife should be held at an angle between 15° and 20° and drawn from the base to the tip without applying pressure. Care should be taken not to overheat the knife during sharpening, and fine burrs formed after the process should be cleaned. For long-term use of knives, it is recommended to avoid prolonged contact with substances that may cause corrosion, such as salt water.
