The Fischer sharpening steel is a honing tool designed to maintain the sharpness of knives in both professional and home kitchens. The plastic handle design allows for ergonomic use by both right and left-handed users. A special hand guard is integrated into the handle to ensure safe operation.

When using the sharpening steel, the knife's cutting edge should be held at an angle between 15° and 20° and drawn from the base to the tip without applying pressure. In cases where the blade edge has become too thick, it is recommended to thin the edge to between 0.4 and 0.6 mm before sharpening. Avoiding overheating is important to preserve the structure and hardness of the steel.

Removing the fine burrs formed after the sharpening process improves the knife's cutting precision and resistance to dulling. For long-lasting use, it is recommended to avoid prolonged contact with substances that may cause corrosion, such as saltwater.
