The Fischer oval sharpening steel is a sharpening tool designed to maintain the sharpness of knives in professional and home-type kitchens. Produced from special high-carbon steel alloyed with chromium, manganese, and silicon, this product is coated with a hard chromium layer 8 to 10 microns thick that provides protection against corrosion. Thanks to this special coating, surface hardness shows an increase of 3 to 4 HRC. Thanks to its magnetization feature, it holds the steel particles that emerge during sharpening, offering a clean working environment and leaving no scratch marks on the knife surface.
During the use of the sharpening steel, the cutting edge of the knife should be held at an angle of 15 to 20 degrees and pulled from the base to the tip without applying pressure. It is recommended to thin the blade thickness to between 0.4 and 0.6 mm when it becomes too thick. Overheating should be avoided during sharpening, and fine burrs formed at the end of the process should be cleaned. For long-lasting use of the product, it is recommended not to keep it in contact with substances that may cause corrosion, such as salt water, for a long time.
