The Fischer straight sharpening steel is designed to maintain the sharpness of knives and perform sharpening operations in professional and home kitchens. Produced from high-carbon steel alloyed with chromium, manganese, and silicon, this product is coated with a hard chrome layer 8 to 10 microns thick, which shows high resistance to corrosion. The plastic handle design has been developed to be suitable for ergonomic use by both right and left-handed individuals.
During the use of the sharpening steel, the cutting edge of the knife should be held at an angle between 15 and 20 degrees and pulled from the base to the tip without applying pressure. Thanks to the magnetization feature, the steel particles that emerge during sharpening are retained on the steel. To maintain the cutting performance and resistance to dulling of the knives, it is recommended to carefully clean the fine burrs formed after sharpening.
